Oven-Baked Beef Taquitos are crispy rolled tortillas filled with seasoned ground beef and cheese.
Ingredients

- 1 lb ground beef
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 10 small corn tortillas
- Olive oil spray or brush-on olive oil
- Salsa, guacamole, and sour cream for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper to the skillet. Cook for 3-5 minutes.
- Remove from heat and stir in shredded cheddar cheese.
- Warm corn tortillas in a microwave for 30 seconds to make them pliable.
- Place a spoonful of the beef mixture on each tortilla and roll tightly.
- Place rolled taquitos seam-side down on a baking sheet.
- Spray or brush with olive oil.
- Bake for 20-25 minutes until golden and crispy.
- Serve with salsa, guacamole, and sour cream.
Notes
- Adjust spices to your taste.
- Use flour tortillas for a different texture.
- Store leftovers in an airtight container in the fridge.
