Description
This One-Pot Sausage, Kale, and Potato Soup is hearty and full of flavor. It’s perfect for a cozy meal.
Ingredients

- 1 T oil
- 24 oz kielbasa sausage, sliced into rounds
- 1 medium yellow onion, small diced
- 1 stalk celery, small diced
- 1 carrot, small diced
- 6 cloves garlic, minced
- 1 tsp red pepper flakes
- 2 tsp Italian seasoning
- 1½ tsp salt
- ¼ tsp black pepper
- 15 oz fire roasted tomatoes
- 4 Yukon gold potatoes, diced
- 64 oz chicken broth
- 4 cups kale or spinach
- 1½ cups half and half, room temperature
- fresh shredded parmesan, for serving
- chopped parsley, for serving
Instructions
- Heat oil in a large pot over medium heat.
- Add kielbasa and cook until browned.
- Add onion, celery, carrot, and garlic; sauté until softened.
- Stir in red pepper flakes, Italian seasoning, salt, and black pepper.
- Add fire roasted tomatoes, potatoes, and chicken broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Add kale or spinach and half and half; cook until greens are wilted.
- Serve hot, topped with parmesan and parsley.
Notes
- This soup can be made ahead and stored in the fridge.
- Reheat on the stove before serving.
- Feel free to swap out greens as desired.
