A comforting and hearty one pot lasagna soup that combines all the flavors of traditional lasagna in a simple soup form.
Ingredients

- 1 lb ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- 4 cups chicken or beef broth
- 1 jar (24 oz) marinara or pasta sauce
- 2 cups water
- 8 lasagna noodles, broken into pieces
- 1/2 cup heavy cream or half-and-half
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- In a large pot, brown the ground beef or sausage over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is translucent.
- Stir in Italian seasoning and crushed red pepper flakes, if using.
- Add the broth, marinara sauce, and water. Bring to a boil.
- Stir in the broken lasagna noodles. Reduce heat and simmer until noodles are tender.
- Stir in the heavy cream or half-and-half.
- Add mozzarella and Parmesan cheese. Stir until melted and combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil or parsley.
Notes
- This soup can be made ahead and reheated.
- Store leftovers in an airtight container in the refrigerator.
- Feel free to add vegetables like spinach or bell peppers for extra nutrition.
