Description

A comforting and hearty one pot lasagna soup that combines all the flavors of traditional lasagna in a simple soup form.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken or beef broth
  • 1 jar (24 oz) marinara or pasta sauce
  • 2 cups water
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup heavy cream or half-and-half
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. In a large pot, brown the ground beef or sausage over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion is translucent.
  3. Stir in Italian seasoning and crushed red pepper flakes, if using.
  4. Add the broth, marinara sauce, and water. Bring to a boil.
  5. Stir in the broken lasagna noodles. Reduce heat and simmer until noodles are tender.
  6. Stir in the heavy cream or half-and-half.
  7. Add mozzarella and Parmesan cheese. Stir until melted and combined.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with fresh basil or parsley.
