Description
One-Pan Cowboy Butter Tortellini Steak Bites is a hearty dish combining tender steak, flavorful butter sauce, and cheese tortellini.
Ingredients

- 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
- 1 tsp Cajun seasoning (or to taste)
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt & black pepper, to taste
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 4 cloves garlic, minced
- ½ tsp red pepper flakes (optional, for heat)
- 1 tsp Dijon mustard
- Juice of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 12 oz cheese tortellini (fresh or refrigerated)
- ½ cup grated Parmesan cheese
- ½ cup reserved pasta water
Instructions
- Season the steak cubes with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.
- In a large pan, heat olive oil over medium-high heat.
- Add the steak bites and cook until browned, about 3-4 minutes. Remove from the pan and set aside.
- In the same pan, melt the butter. Add minced garlic and red pepper flakes, cooking until fragrant.
- Stir in Dijon mustard, lemon juice, parsley, and chives.
- Add the cooked steak bites back into the pan and mix well.
- In another pot, cook the tortellini according to package instructions. Reserve ½ cup of pasta water.
- Add the cooked tortellini to the steak and butter mixture along with reserved pasta water and Parmesan cheese. Stir to combine.
- Cook for an additional 2-3 minutes, allowing the flavors to meld.
Notes
- Adjust seasoning to your preference.
- For extra heat, increase red pepper flakes.
