This One-Pan Bold Honey BBQ Chicken Rice is a simple and flavorful dish combining tender chicken, savory rice, and a sweet BBQ sauce.

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables
- Chopped green onions or parsley (optional, for garnish)
Instructions
- In a large pan, heat a little oil over medium heat.
- Add chicken and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until browned.
- Remove chicken and set aside.
- In the same pan, add rice and stir for 1 minute.
- Add chicken broth and bring to a boil.
- Reduce heat, return chicken to the pan, and cover. Cook for about 15 minutes.
- Add mixed vegetables and BBQ sauce mixed with honey. Stir well.
- Cover and cook for another 5-7 minutes until rice is tender.
- Garnish with green onions or parsley if desired.
Notes
- This dish can be made with either chicken thighs or breasts.
- Feel free to adjust the BBQ sauce to your taste.
- Frozen vegetables work well for convenience.
