This One-Pan Bold Honey BBQ Chicken Rice is a simple and flavorful dish combining tender chicken, savory rice, and a sweet BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables
  • Chopped green onions or parsley (optional, for garnish)

Instructions

  1. In a large pan, heat a little oil over medium heat.
  2. Add chicken and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until browned.
  3. Remove chicken and set aside.
  4. In the same pan, add rice and stir for 1 minute.
  5. Add chicken broth and bring to a boil.
  6. Reduce heat, return chicken to the pan, and cover. Cook for about 15 minutes.
  7. Add mixed vegetables and BBQ sauce mixed with honey. Stir well.
  8. Cover and cook for another 5-7 minutes until rice is tender.
  9. Garnish with green onions or parsley if desired.

Notes

  • This dish can be made with either chicken thighs or breasts.
  • Feel free to adjust the BBQ sauce to your taste.
  • Frozen vegetables work well for convenience.
