Description
Old-Fashioned Hummingbird Cake is a moist and flavorful dessert made with ripe bananas, crushed pineapple, and nuts, topped with a rich cream cheese frosting.

- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 2 cups mashed ripe bananas (about 4 bananas)
- 1 cup chopped pecans or walnuts (optional)
- For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (as needed)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, baking soda, cinnamon, and salt.
- Add vegetable oil, eggs, and vanilla extract. Mix until combined.
- Stir in crushed pineapple, mashed bananas, and nuts if using.
- Pour the batter into greased cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the frosting, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla, mixing until creamy. Adjust consistency with milk if needed.
- Frost the cooled cake as desired.
