Description
A creamy and cheesy Monterey Chicken Spaghetti with tender chicken pieces, seasoned with Italian spices and topped with Monterey Jack cheese.

- 12 ounces spaghetti, cooked al dente
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup shredded Monterey Jack cheese
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley for garnish
Instructions
- Cook spaghetti al dente according to package instructions. Drain and set aside.
- Heat olive oil and butter in a large skillet over medium heat.
- Add chicken pieces and cook until golden brown and fully cooked. Remove and set aside.
- In the same skillet, sauté onion and garlic until soft and fragrant.
- Pour in chicken broth and heavy cream, then add paprika and Italian seasoning. Stir well.
- Bring the sauce to a simmer and cook for 3-5 minutes until slightly thickened.
- Return the cooked chicken to the skillet and mix well.
- Add the cooked spaghetti to the skillet and toss to coat evenly with the sauce.
- Sprinkle Monterey Jack cheese on top and cover until the cheese melts.
- Garnish with fresh parsley before serving.
Notes
- Adjust seasoning with more salt and pepper if needed.
- For extra spice, add a pinch of red pepper flakes.
- Store leftovers in an airtight container for up to 3 days.
