- 1 lb ground beef (80/20 or 85/15)
- 8 oz wide noodles (lo mein, rice noodles, or spaghetti)
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 4 green onions, sliced (reserve some for garnish)
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 2 tbsp hoisin sauce
- 1/2 tsp sriracha or red pepper flakes (adjust to taste)
- 1 tsp cornstarch
- 1/2 cup water
- 1 tsp sesame oil
- 1 tbsp vegetable oil (for cooking)
- Optional garnishes: sesame seeds, fried shallots, lime wedges
Instructions
- Cook the noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Add the garlic and ginger, cooking for an additional minute.
- Stir in the green onions, soy sauce, brown sugar, hoisin sauce, sriracha or red pepper flakes, cornstarch, water, and sesame oil.
- Bring the mixture to a simmer and cook until sauce thickens.
- Add the cooked noodles to the skillet and toss to coat.
- Serve hot, garnished with reserved green onions and optional toppings.
Notes
- Adjust spice level by varying the amount of sriracha or red pepper flakes.
- Use gluten-free noodles for a gluten-free version.
- Beef can be substituted with ground turkey or chicken.
