Delicious mini pumpkin muffins with a warm spice flavor and a sweet cinnamon sugar coating.

- 1 3/4 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground allspice
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 4 tbsp unsalted butter, melted and slightly cooled
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg, at room temperature
- 1 cup canned pumpkin puree
- 1/2 cup milk, at room temperature
- 4 tbsp unsalted butter, melted (for coating)
- 1/2 cup granulated sugar (for coating)
- 1 tsp ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line a mini muffin pan with liners.
- In a bowl, whisk together the flour, baking powder, cinnamon, ginger, allspice, nutmeg, cloves, and salt.
- In another bowl, mix the melted butter, brown sugar, and granulated sugar until combined.
- Add the egg, pumpkin puree, and milk to the butter mixture. Stir until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the batter into the mini muffin pan, filling each cup about two-thirds full.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
- While the muffins cool, prepare the cinnamon sugar coating by combining melted butter, granulated sugar, and cinnamon in a bowl.
- Once the muffins are slightly cooled, dip the tops into the cinnamon sugar mixture.

- Store the muffins in an airtight container for up to three days.
- These muffins can be frozen for up to three months.
