Ingredients
- Cream cheese (4 x 8 oz packages)
- Granulated sugar (1 cup)
- Sour cream (1 cup)
- Vanilla extract (1 tsp)
- Large eggs (3)
- Fresh or frozen blueberries (1 cup)
- Granulated sugar for swirl (2 tbsp)
- Lemon juice (1 tbsp)
- Cornstarch slurry (1 tsp cornstarch + 2 tbsp water)
Instructions
- Preheat your oven to 325°F (163°C).
- Bring all ingredients to room temperature.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add sour cream and vanilla extract, mixing well.
- Incorporate eggs one at a time, mixing gently.
- In a saucepan, combine blueberries, sugar, and lemon juice. Simmer until blueberries burst.
- Mix cornstarch slurry into blueberry mixture to thicken.
- Pour the cheesecake batter into a springform pan.
- Drizzle the blueberry swirl over the batter and use a knife to create a swirl effect.
- Bake for 50-60 minutes or until the center is set.
- Allow to cool before refrigerating for at least 4 hours.

- Use full-fat cream cheese for the best texture.
- Let the cheesecake cool completely before refrigerating.
- For a firmer texture, increase the baking time slightly.
