A hearty and flavorful Mexican tortilla casserole layered with seasoned ground meat, beans, corn, and cheese.

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef or turkey
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn kernels, drained
- 1 (15-ounce) can diced tomatoes, drained
- 1 (8-ounce) can tomato sauce
- 1 (4-ounce) can diced green chiles
- 2 cups shredded cheddar cheese
- 6 small corn tortillas, cut into quarters
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat oven to 375°F.
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, cook until softened.
- Add ground meat, cook until browned.
- Stir in cumin, chili powder, paprika, salt, and black pepper.
- Add black beans, corn, diced tomatoes, tomato sauce, and green chiles. Simmer for 5 minutes.
- Layer half the tortillas in a greased baking dish.
- Spread half the meat mixture over the tortillas.
- Sprinkle with half the cheese.
- Repeat layers with remaining tortillas, meat mixture, and cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
- Use ground turkey for a lighter version.
- Substitute corn tortillas with flour tortillas if preferred.
- Add jalapeños for extra heat.
