A hearty and flavorful Mexican tortilla casserole layered with seasoned ground meat, beans, corn, and cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn kernels, drained
  • 1 (15-ounce) can diced tomatoes, drained
  • 1 (8-ounce) can tomato sauce
  • 1 (4-ounce) can diced green chiles
  • 2 cups shredded cheddar cheese
  • 6 small corn tortillas, cut into quarters
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and garlic, cook until softened.
  4. Add ground meat, cook until browned.
  5. Stir in cumin, chili powder, paprika, salt, and black pepper.
  6. Add black beans, corn, diced tomatoes, tomato sauce, and green chiles. Simmer for 5 minutes.
  7. Layer half the tortillas in a greased baking dish.
  8. Spread half the meat mixture over the tortillas.
  9. Sprinkle with half the cheese.
  10. Repeat layers with remaining tortillas, meat mixture, and cheese.
  11. Bake for 20 minutes or until cheese is melted and bubbly.
  12. Garnish with fresh cilantro before serving.

Notes

  • Use ground turkey for a lighter version.
  • Substitute corn tortillas with flour tortillas if preferred.
  • Add jalapeños for extra heat.
