  • Sugar – 2 tablespoons
  • Garlic – 2 cloves, crushed
  • Dried chili – 1 (optional, for heat)
  • Black peppercorns – 5
  • Bay leaf – 1
  • Fresh herbs (such as dill or cilantro) – a small handful, roughly chopped
  • Olive oil – 2 tablespoons
  • Maple syrup – 1 tablespoon
  • Lime juice – 2 tablespoons (freshly squeezed)
  • Red onion – 1 small, finely chopped

Instructions

  1. Slice cucumbers into thin rounds and place in a bowl.
  2. In a separate bowl, mix vinegar, water, salt, sugar, and crushed garlic.
  3. Add dried chili, black peppercorns, and bay leaf to the vinegar mixture.
  4. Pour the mixture over the cucumbers.
  5. Add chopped herbs, olive oil, maple syrup, lime juice, and red onion.
  6. Mix well and let it marinate for at least 30 minutes before serving.
