This Magical Lasagna Soup combines the flavors of lasagna in a comforting soup form.
Ingredients

- 1 lb lean ground beef
- 1 lb Italian sausage (sweet or spicy)
- 1 medium onion, diced
- 4 cloves garlic, minced
- 28 oz crushed tomatoes (canned)
- 4 cups chicken broth
- 2 cups small pasta (e.g., ditalini or orecchiette)
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 tsp dried oregano
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef and Italian sausage over medium heat.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
- Stir in the crushed tomatoes and chicken broth.
- Bring the mixture to a boil, then reduce heat to a simmer.
- Add the small pasta and cook according to package instructions.
- Once the pasta is cooked, stir in the ricotta cheese and half of the mozzarella cheese.
- Season with dried oregano, salt, and pepper.
- Serve hot, garnished with fresh basil and remaining mozzarella cheese.
