Description

This Magical Lasagna Soup combines the flavors of lasagna in a comforting soup form.


Ingredients

  • 1 lb lean ground beef
  • 1 lb Italian sausage (sweet or spicy)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 28 oz crushed tomatoes (canned)
  • 4 cups chicken broth
  • 2 cups small pasta (e.g., ditalini or orecchiette)
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef and Italian sausage over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the crushed tomatoes and chicken broth.
  4. Bring the mixture to a boil, then reduce heat to a simmer.
  5. Add the small pasta and cook according to package instructions.
  6. Once the pasta is cooked, stir in the ricotta cheese and half of the mozzarella cheese.
  7. Season with dried oregano, salt, and pepper.
  8. Serve hot, garnished with fresh basil and remaining mozzarella cheese.
