Lusciously Soft Lemon Rolls are a delightful combination of soft dough and zesty lemon filling, topped with a sweet glaze.

- 3 1/2 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) instant yeast
- 1/2 cup warm milk (110°F/45°C)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened (for filling)
- 1/2 cup granulated sugar (for filling)
- 2 tablespoons lemon zest (for filling)
- 2 tablespoons fresh lemon juice (for filling)
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons fresh lemon juice (for glaze)
- 1 teaspoon lemon zest (for glaze)
Instructions
- In a bowl, combine flour, yeast, sugar, and salt.
- In another bowl, mix warm milk, melted butter, egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and knead until smooth.
- Let the dough rise in a warm place until doubled in size, about 1 hour.
- Roll out the dough on a floured surface into a rectangle.
- Spread softened butter over the dough and sprinkle with sugar, lemon zest, and lemon juice.
- Roll the dough tightly and cut into rolls.
- Place rolls in a greased baking dish and let rise again for 30 minutes.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes.
- Mix powdered sugar, lemon juice, and lemon zest to create the glaze.
- Drizzle glaze over warm rolls before serving.
Notes
- For best results, use fresh lemons for zest and juice.
- Store leftovers in an airtight container.
- These rolls can be frozen for later enjoyment.
