Description

A rich and creamy lobster pot pie filled with fresh lobster meat and vegetables.


Ingredients

  • 1 lb fresh lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 1 cup chicken or seafood stock
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 pre-made pie crusts (or homemade if preferred)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced onion and garlic, sauté until translucent.
  4. Add carrots, celery, and peas, cook until tender.
  5. Stir in lobster meat, heavy cream, stock, thyme, lemon juice, salt, and pepper.
  6. Simmer for 5 minutes, then remove from heat.
  7. Place one pie crust in a pie dish and pour the lobster mixture inside.
  8. Cover with the second pie crust, seal edges, and cut slits on top.
  9. Brush the top with beaten egg.
  10. Bake for 25-30 minutes, or until golden brown.

  • Use fresh lobster for the best flavor.
  • Feel free to add your favorite vegetables.
  • Let the pie cool for a few minutes before serving.
