Description
A rich and creamy lobster pot pie filled with fresh lobster meat and vegetables.

- 1 lb fresh lobster meat, cooked and chopped
- 1 cup heavy cream
- 1 cup chicken or seafood stock
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup frozen peas
- 2 tablespoons fresh thyme, chopped
- 1 teaspoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 pre-made pie crusts (or homemade if preferred)
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and garlic, sauté until translucent.
- Add carrots, celery, and peas, cook until tender.
- Stir in lobster meat, heavy cream, stock, thyme, lemon juice, salt, and pepper.
- Simmer for 5 minutes, then remove from heat.
- Place one pie crust in a pie dish and pour the lobster mixture inside.
- Cover with the second pie crust, seal edges, and cut slits on top.
- Brush the top with beaten egg.
- Bake for 25-30 minutes, or until golden brown.
Notes
- Use fresh lobster for the best flavor.
- Feel free to add your favorite vegetables.
- Let the pie cool for a few minutes before serving.
