  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (85g) old-fashioned or quick oats
  • 1 can (14 ounces) sweetened condensed milk
  • 6 tablespoons (90ml) lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. Mix butter, brown sugar, and vanilla until creamy.
  3. Add flour, baking powder, salt, and oats. Mix until crumbly.
  4. Press 2/3 of the mixture into the pan. Bake for 10 minutes.
  5. Whisk condensed milk, lemon juice, and zest in a bowl.
  6. Pour lemon filling over the baked crust.
  7. Sprinkle the remaining oat mixture on top.
  8. Bake for 20 minutes or until golden brown.
  9. Cool completely before cutting into bars.
