  • 1 lb boneless chicken breast or thighs, diced
  • 1 tbsp olive oil or butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup BBQ sauce
  • 3 tbsp honey
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 1 tbsp BBQ sauce (optional, for flavor boost)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add diced chicken and season with garlic powder, onion powder, paprika, salt, and black pepper. Cook until chicken is no longer pink.
  3. Stir in BBQ sauce and honey. Cook for another 3-5 minutes, until well coated.
  4. In a separate pot, melt butter and sauté minced garlic until fragrant.
  5. Add rice to the pot and stir for 1-2 minutes.
  6. Add chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  7. Once rice is cooked, fluff with a fork and add chicken mixture on top. Serve warm.
