Ingredients

  • 2 Boneless, skinless chicken breasts
  • 1/2 cup Pineapple juice
  • 1/4 cup Soy sauce
  • 1/4 cup Brown sugar
  • 2 tablespoons Vegetable oil
  • 2 cloves Minced garlic
  • 1 tablespoon Minced ginger
  • 1/2 teaspoon Black pepper
  • 1 cup Coconut milk
  • 1 cup Jasmine rice
  • 1 cup Water
  • 1/2 teaspoon Salt
  • 2 Green onions, chopped
  • 1 tablespoon Sesame seeds

Instructions

  1. In a bowl, combine pineapple juice, soy sauce, brown sugar, vegetable oil, garlic, ginger, and black pepper to make the marinade.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. While the chicken marinates, rinse jasmine rice under cold water until the water runs clear.
  4. In a pot, combine the rinsed rice, coconut milk, water, and salt. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked.
  6. Preheat the grill over medium heat. Grill the marinated chicken for about 6-7 minutes on each side or until cooked through.
  7. Fluff the coconut rice with a fork and serve with grilled chicken.
  8. Garnish with green onions and sesame seeds before serving.

Notes

  • For extra flavor, let the chicken marinate longer.
  • Adjust the sweetness by modifying the brown sugar amount.
  • Use fresh pineapple juice for better taste.
