A hearty and flavorful Ground Beef Zucchini Bake that combines fresh vegetables and savory beef.


Ingredients

  • lbs zucchini, cut into rounds, salted and patted dry
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 8 oz mushrooms, diced
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 lb ground beef
  • ½ tsp paprika
  • 1 cup marinara sauce
  • 1½ cups shredded mozzarella cheese
  • 2 tsp Italian herb blend
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced onion and mushrooms. Cook until softened.
  4. Stir in ground beef and cook until browned.
  5. Add salt, garlic powder, onion powder, and paprika. Mix well.
  6. Stir in marinara sauce and Italian herb blend.
  7. In a baking dish, layer zucchini rounds at the bottom.
  8. Pour beef mixture over zucchini.
  9. Top with shredded mozzarella and Parmesan cheese.
  10. Bake for 25-30 minutes until cheese is bubbly.
  11. Let cool for a few minutes before serving.
