A hearty and flavorful Ground Beef Zucchini Bake that combines fresh vegetables and savory beef.
Ingredients

- 1½ lbs zucchini, cut into rounds, salted and patted dry
- 1 tbsp olive oil
- 1 medium onion, diced
- 8 oz mushrooms, diced
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 lb ground beef
- ½ tsp paprika
- 1 cup marinara sauce
- 1½ cups shredded mozzarella cheese
- 2 tsp Italian herb blend
- 2 tbsp grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add diced onion and mushrooms. Cook until softened.
- Stir in ground beef and cook until browned.
- Add salt, garlic powder, onion powder, and paprika. Mix well.
- Stir in marinara sauce and Italian herb blend.
- In a baking dish, layer zucchini rounds at the bottom.
- Pour beef mixture over zucchini.
- Top with shredded mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until cheese is bubbly.
- Let cool for a few minutes before serving.
Notes
- Choose firm zucchinis for best results.
- Adjust seasoning to taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
