- 3 cups cooked shredded chicken
- 2 cups shredded Monterey Jack or cheddar cheese
- 1 (10 oz) can green enchilada sauce
- 1 (4 oz) can diced green chiles
- 1 cup sour cream
- 1 small onion, diced
- 8 corn tortillas (cut in halves or quarters)
- 1 tbsp olive oil
- ½ tsp cumin
- ¼ tsp garlic powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the diced onion until translucent.
- In a large bowl, mix the cooked chicken, sautéed onion, green enchilada sauce, diced green chiles, sour cream, cumin, garlic powder, salt, and pepper.
- In a baking dish, layer half of the tortillas on the bottom.
- Spread half of the chicken mixture over the tortillas.
- Sprinkle half of the cheese on top.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- Bake for 25-30 minutes, until the cheese is melted and bubbly.
- Garnish with chopped cilantro before serving.
Notes
- Use rotisserie chicken for convenience.
- Adjust spice level by adding jalapeños or using spicier enchilada sauce.
- Let the casserole cool for a few minutes before serving.
