- 8 oz dry macaroni noodles
- ½ cup finely diced sweet gherkins
- ¾ cup finely diced red bell pepper
- ⅓ cup thinly sliced celery
- ⅓ cup finely diced red onion
- 2 large hard-boiled eggs, finely diced
- ¾ cup mayonnaise
- ¼ cup sour cream
- 2 Tbsp sweet pickle juice
- 1 Tbsp red wine vinegar
- 1 Tbsp sugar
- 2 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp black pepper
- ⅛ tsp garlic powder
- ⅛ tsp crushed red pepper
Instructions
- Cook the macaroni noodles until al dente. Drain and set aside.
- In a large bowl, combine sweet gherkins, red bell pepper, celery, red onion, and hard-boiled eggs.
- In a separate bowl, mix mayonnaise, sour cream, sweet pickle juice, red wine vinegar, sugar, Dijon mustard, salt, black pepper, garlic powder, and crushed red pepper.
- Pour the dressing over the salad ingredients and mix well.
- Taste and adjust seasoning if necessary.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a vegan option, use vegan mayo and skip the eggs.
- Feel free to customize vegetables based on your preference.
- Can be made a day in advance for better flavor.
