Description

A delicious German Chocolate Cake Roll filled with coconut-pecan filling and topped with chocolate ganache.


Ingredients

  • ¾ cup (150 g) granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup (65 g) all-purpose flour
  • ¼ cup (30 g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons milk
  • Powdered sugar (for dusting the kitchen towel)
  • 1 cup (240 ml) sweetened condensed milk
  • 3 egg yolks
  • ½ cup (115 g) unsalted butter
  • 1 cup (95 g) sweetened shredded coconut
  • 1 cup (120 g) chopped pecans
  • 1 teaspoon vanilla extract
  • 1 cup (170 g) semisweet or milk chocolate chips
  • ½ cup (120 ml) heavy cream, heated
  • 1 tablespoon butter (optional, for shine)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat eggs and sugar until thick and pale.
  3. Add vanilla extract and mix well.
  4. In another bowl, combine flour, cocoa powder, baking powder, and salt.
  5. Gradually fold dry ingredients into the egg mixture.
  6. Pour the batter onto the prepared baking sheet and spread evenly.
  7. Bake for 12-15 minutes or until a toothpick comes out clean.
  8. Once baked, dust a kitchen towel with powdered sugar and invert the cake onto it.
  9. Roll the cake with the towel and let it cool completely.
  10. For the filling, combine sweetened condensed milk, egg yolks, and butter in a saucepan over medium heat.
  11. Stir until thickened, then remove from heat and mix in coconut, pecans, and vanilla extract.
  12. Unroll the cooled cake and spread the filling evenly over the surface.
  13. Roll the cake back up and place it seam-side down on a serving platter.
  14. For the ganache, combine chocolate chips and heated cream in a bowl, stirring until smooth.
  15. Pour ganache over the rolled cake and let it set before serving.

Notes

  • Make sure the eggs are at room temperature for better volume.
  • Allow the ganache to cool slightly before pouring for a thicker consistency.
  • You can refrigerate the cake for better flavor before serving.
