A delicious twist on grilled cheese with roast beef and au jus.
Ingredients

- 8 slices crusty French bread
- 8 slices Swiss cheese
- 12 ounces thinly sliced roast beef
- 2 medium yellow onions, thinly sliced
- 4 tablespoons unsalted butter, plus extra for spreading
- 1 tablespoon olive oil
- 2 cups low-sodium beef broth
- 2 teaspoons Worcestershire sauce
- 1 teaspoon soy sauce
- 1 garlic clove, minced
- 1 sprig fresh thyme
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and cook until caramelized, about 15 minutes.
- In a separate pot, combine beef broth, Worcestershire sauce, soy sauce, garlic, thyme, salt, and pepper. Simmer for 10 minutes.
- Butter one side of each slice of French bread.
- Layer Swiss cheese, roast beef, and caramelized onions between two slices of bread, buttered side out.
- Grill sandwiches in the skillet until golden brown on both sides and cheese is melted.
- Serve sandwiches with au jus for dipping.
Notes
- Use low-sodium broth for better control of saltiness.
- Feel free to add more cheese if desired.
- Adjust the thickness of the roast beef to your liking.
