Description
This Elegant Black Forest Cake Roll combines a rich chocolate sponge cake with a creamy cherry filling and a glossy chocolate ganache.

- Chocolate curls or shavings (for decoration)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, beat the eggs and sugar until thick and pale.
- Add vanilla extract and mix well.
- Sift together the flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
- Pour the batter onto the prepared baking sheet and spread evenly.
- Bake for 12-15 minutes or until the cake springs back when touched.
- Dust a clean kitchen towel with powdered sugar and turn the cake onto it immediately.
- Roll the cake tightly in the towel and let it cool.
- In a bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Unroll the cooled cake and spread the whipped cream mixture evenly over the surface.
- Sprinkle chopped cherries and drizzle with kirsch or cherry juice if using.
- Roll the cake back up without the towel and place it seam-side down.
- For the ganache, heat the heavy cream until just simmering, then pour over the chopped chocolate and butter. Stir until smooth.
- Pour the ganache over the rolled cake, letting it drip down the sides.
- Decorate with whipped cream, whole cherries, and chocolate curls if desired.

- Use fresh cherries for a vibrant flavor.
- Chill the cake for a few hours before serving for better slicing.
- You can substitute the kirsch with cherry juice for a non-alcoholic version.
