  • 4 ounces dark or semi-sweet chocolate, chopped

  • Whole cherries (for decoration)
  • Chocolate curls or shavings (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat the eggs and sugar until thick and pale.
  3. Add vanilla extract and mix well.
  4. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
  5. Pour the batter onto the prepared baking sheet and spread evenly.
  6. Bake for 12-15 minutes or until the cake springs back when touched.
  7. Dust a clean kitchen towel with powdered sugar and turn the cake onto it immediately.
  8. Roll the cake tightly in the towel and let it cool.
  9. In a bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
  10. Unroll the cooled cake and spread the whipped cream mixture evenly over the surface.
  11. Sprinkle chopped cherries and drizzle with kirsch or cherry juice if using.
  12. Roll the cake back up without the towel and place it seam-side down.
  13. For the ganache, heat the heavy cream until just simmering, then pour over the chopped chocolate and butter. Stir until smooth.
  14. Pour the ganache over the rolled cake, letting it drip down the sides.
  15. Decorate with whipped cream, whole cherries, and chocolate curls if desired.
