  • 8 ounces corn muffin mix (1 box, like Jiffy’s)
  • 15 ounces creamed corn
  • 15 ounces whole kernel corn, drained
  • 4 ounces pepper jack cheese, grated
  • 3 green onions, thinly sliced

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, mix sour cream, melted butter, and egg until smooth.
  3. Stir in black pepper, onion powder, and garlic powder.
  4. Add corn muffin mix, creamed corn, and drained whole kernel corn. Mix well.
  5. Fold in grated pepper jack cheese and sliced green onions.
  6. Pour mixture into the prepared baking dish.
  7. Bake for 40-45 minutes or until golden brown and set.
  8. Let cool for 5 minutes before serving.
