Ingredients

  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until smooth.
  3. Add the egg and vanilla extract, mixing well.
  4. In another bowl, combine flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Fold in the freeze-dried strawberries and strawberry jam.
  7. Drop spoonfuls of dough onto a baking sheet.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Allow cookies to cool on a wire rack.
  10. For icing, beat cream cheese until smooth, then add powdered sugar, hot milk, and vanilla.
  11. Spread icing over cooled cookies.
