This Dill Pickle Pasta Salad is a refreshing and tangy dish perfect for picnics or barbecues.

Ingredients

Scale
  • 8 oz colby jack cheese (diced into 1/4-inch cubes)
  • 1 box rotini noodles
  • 1/3 cup dill pickle brine
  • 2 cups chopped dill pickles (about 1/2-inch pieces)
  • 1 small white onion (minced fine, about 1/4-inch pieces)
  • 2 tbsp fresh dill (chopped, or 1 tbsp dried dill)
  • 1 cup mayonnaise
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/3 cup dill pickle liquid
  • 1/2 cup sour cream

Instructions

  1. Cook the rotini noodles according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled noodles, colby jack cheese, dill pickles, and onion.
  3. In a separate bowl, mix together the mayonnaise, dill, salt, pepper, dill pickle liquid, and sour cream until smooth.
  4. Pour the dressing over the pasta salad and toss to coat evenly.
  5. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • Adjust the amount of dill pickle brine based on your taste preference.
  • For a lighter version, use low-fat mayonnaise and sour cream.
  • Feel free to add other vegetables like bell peppers or celery for extra crunch.
