- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup mini marshmallows (optional for extra gooeyness)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients until just incorporated.
- Fold in the Rice Krispies cereal, chocolate chips, and mini marshmallows (if using).
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container for up to 3 days.
- For extra crunch, add an additional 1/4 cup of Rice Krispies.
- If marshmallows are used, cookies will be softer and gooier.
