  • 4 cups chicken or vegetable broth
  • 1 (14 oz) can diced tomatoes, with juice
  • 1 cup heavy cream
  • 1 (8 oz) package cream cheese, softened and cubed
  • 4 cups fresh spinach (or 1 bag frozen spinach, thawed and drained)
  • 2 teaspoons Italian seasoning
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Add broth, diced tomatoes, heavy cream, cream cheese, Italian seasoning, garlic, salt, and black pepper to the crockpot.
  2. Stir well to combine.
  3. Cover and cook on low for 3-4 hours or high for 2 hours.
  4. Add tortellini and spinach, stirring gently.
  5. Cover and cook for another 30 minutes on high or until tortellini is tender.
  6. Stir in Parmesan cheese and red pepper flakes if using.
  7. Serve warm.
