- 1 (20 oz) package cheese tortellini (refrigerated or frozen)
- 4 cups chicken or vegetable broth
- 1 (14 oz) can diced tomatoes, with juice
- 1 cup heavy cream
- 1 (8 oz) package cream cheese, softened and cubed
- 4 cups fresh spinach (or 1 bag frozen spinach, thawed and drained)
- 2 teaspoons Italian seasoning
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese (optional)
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Add broth, diced tomatoes, heavy cream, cream cheese, Italian seasoning, garlic, salt, and black pepper to the crockpot.
- Stir well to combine.
- Cover and cook on low for 3-4 hours or high for 2 hours.
- Add tortellini and spinach, stirring gently.
- Cover and cook for another 30 minutes on high or until tortellini is tender.
- Stir in Parmesan cheese and red pepper flakes if using.
- Serve warm.
Notes
- Use refrigerated tortellini for best results.
- Adjust seasoning to taste.
- Garnish with extra Parmesan if desired.
