- 2 large eggs, lightly beaten
- ¾ to 1 cup American style lite beer (Miller Lite, Bud Lite or Coors Lite)
- 1 ½ cups fresh jalapeno slices, ¼ inch thick rings (from 4–5 large jalapenos)
Instructions
- Heat canola oil in a deep fryer or large pot to 375°F.
- In a bowl, mix flour, salt, smoked paprika, garlic powder, and black pepper.
- Add beaten eggs and beer to the dry ingredients, stirring until smooth.
- Dip jalapeño rings into the batter, coating evenly.
- Fry in batches until golden brown, about 2-3 minutes per batch.
- Drain on paper towels and serve warm.
Notes
- Use gloves when handling jalapeños to avoid skin irritation.
- Adjust beer amount for desired batter thickness.
- Serve with ranch or spicy mayo for dipping.
