- 4 x 170g | 6 oz skinless salmon fillets
- Salt and pepper to taste
- ¼ cup flour (OPTIONAL)
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 medium garlic cloves minced
- ⅓ cup dry white wine
- 1 cup low-sodium chicken stock/broth (fat free if available)
- 1–2 level teaspoon cornstarch (or corn flour)
- 3–4 tablespoons fresh lemon juice (adjust to your tastes)
- 4 tablespoons rinsed and drained capers
- ½ cup reduced fat cream (or heavy cream)
- 2–4 tablespoons coarsely chopped parsley to serve
- Lemon slices to serve
Instructions
- Season the salmon fillets with salt and pepper.
- If using, dredge the salmon in flour and shake off the excess.
- Melt butter and olive oil in a skillet over medium heat.
- Add the salmon and cook for about 4-5 minutes on each side until golden brown and cooked through.
- Remove the salmon and set aside.
- Add minced garlic to the skillet and sauté for 1 minute.
- Pour in the white wine and chicken stock, scraping the pan to deglaze.
- Mix cornstarch with a bit of water to create a slurry and add to the sauce.
- Stir in lemon juice and capers, and simmer for a few minutes.
- Stir in the cream and return salmon to the skillet, cooking until heated through.
- Serve garnished with parsley and lemon slices.
