  • 2 tablespoons olive oil
  • 3/4 teaspoon dried thyme
  • 1 bay leaf
  • 1 1/2 pounds Yukon Gold potatoes
  • 1/3 cup all-purpose flour
  • 1 (32-ounce) box low-sodium chicken broth
  • 2 cups whole or 2% milk

Instructions

  1. Chop onion, carrots, celery, and garlic.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped vegetables and cook until softened.
  4. Add chicken, salt, pepper, thyme, and bay leaf.
  5. Stir in potatoes and flour, mixing well.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat and simmer until chicken is cooked through.
  8. Remove bay leaf and shred chicken in the pot.
  9. Add milk and stir until creamy.
  10. Adjust seasoning with salt and pepper.
