- 1 cup fresh cranberries
- 1 cup orange juice (freshly squeezed is best)
- 1 tablespoon orange zest
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, combine cranberries, orange juice, orange zest, honey, soy sauce, olive oil, Dijon mustard, and garlic powder.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes until cranberries burst.
- Season the chicken breasts with salt and pepper.
- Place chicken in a baking dish and pour the cranberry mixture over the chicken.
- Bake for 25-30 minutes or until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- Use fresh cranberries for the best flavor.
- Adjust sweetness by adding more or less honey.
- Serve with rice or quinoa for a complete meal.
