A flavorful dish featuring chicken and bowtie pasta in a zesty Cowboy Butter Lemon sauce.
Ingredients

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp Dijon mustard
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 12 oz bowtie (farfalle) pasta
- 2 cups broccoli florets
- 1/2 cup reserved pasta water
- 1/2 cup grated Parmesan cheese (plus extra for topping)
Instructions
- Cook the bowtie pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add chicken, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Cook until chicken is browned and cooked through.
- In another pan, melt the butter over medium heat. Add minced garlic and crushed red pepper flakes. Sauté until fragrant.
- Stir in Dijon mustard, lemon juice, and zest. Mix well.
- Add cooked chicken, pasta, and reserved pasta water to the butter sauce. Toss to combine.
- Fold in broccoli, parsley, and chives. Cook until broccoli is tender.
- Serve with grated Parmesan cheese on top.

- Adjust spice level by modifying red pepper flakes.
- Use fresh herbs for best flavor.
- Can substitute chicken with shrimp or tofu for variation.
