Ingredients

  • 1 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 tablespoon orange zest

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cottage cheese, rolled oats, dried cranberries, orange juice, honey, vanilla extract, baking powder, cinnamon, and salt.
  3. In a separate bowl, beat the eggs and mix in the orange zest.
  4. Add the egg mixture to the cottage cheese mixture and stir until well combined.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30-35 minutes or until set and golden on top.
  7. Allow to cool slightly before serving.
