Ingredients

- 2 cups cottage cheese
- 1 cup rolled oats
- 1/2 cup dried cranberries
- 1/2 cup orange juice
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1 tablespoon orange zest
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine cottage cheese, rolled oats, dried cranberries, orange juice, honey, vanilla extract, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs and mix in the orange zest.
- Add the egg mixture to the cottage cheese mixture and stir until well combined.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until set and golden on top.
- Allow to cool slightly before serving.

- Store leftovers in the refrigerator for up to 3 days.
