Cottage Cheese Carrot Cake Bars are a healthy and delicious treat. They combine the richness of cottage cheese with the natural sweetness of carrots.
Ingredients

- 1 cup cottage cheese
- 2 large eggs
- ½ cup almond flour (or oat flour)
- ½ cup grated carrot
- 2–3 tbsp maple syrup or honey (optional)
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp cinnamon
- Pinch of salt
- Optional: 2–3 tbsp chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine cottage cheese and eggs.
- Add almond flour, grated carrot, maple syrup or honey, vanilla extract, baking powder, cinnamon, and salt. Mix well.
- If using, fold in chopped walnuts or pecans.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- Store leftovers in the refrigerator.
- These bars can be served warm or cold.
