Description
A homemade version of Starbucks Pumpkin Bread, moist and spiced with cinnamon, nutmeg, cloves, and ginger.
Ingredients

- 1 can (15 ounces) solid-pack pumpkin
- 4 large eggs, room temperature
- 3/4 cup canola oil
- 2/3 cup water
- 2 cups sugar
- 1 cup honey
- 1–1/2 teaspoons vanilla extract
- 3–1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1–1/2 teaspoons salt
- 1–1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/2 cup salted pumpkin seeds or pepitas
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, mix pumpkin, eggs, oil, water, sugar, honey, and vanilla.
- In another bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
- Gradually stir dry ingredients into wet ingredients until just combined.
- Pour batter into the loaf pan and sprinkle with pumpkin seeds.
- Bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container for up to 5 days.
- For best texture, let cool completely before slicing.
- Substitute honey with maple syrup if preferred.
