Ingredients

- 1 cup Biscoff or speculoos cookie crumbs
- 3 tbsp melted butter
- 8 oz cream cheese, softened
- ¾ cup powdered sugar
- ½ cup cookie butter (plus extra for drizzling)
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- Extra cookies for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix cookie crumbs and melted butter in a bowl.
- Press the crumb mixture into the bottom of small cups.
- In another bowl, beat cream cheese until smooth.
- Add powdered sugar, cookie butter, and vanilla extract. Mix well.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture.
- Fill the cups with the cheesecake mixture.
- Drizzle extra cookie butter on top.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- Use room temperature cream cheese for best results.
- Adjust sweetness by adding more or less powdered sugar.
- Store leftovers in the refrigerator.
