Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar (for cinnamon swirl)
  • 1 tablespoon ground cinnamon (for cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix mashed bananas and melted butter.
  3. Stir in sugar, beaten egg, and vanilla extract.
  4. Add baking soda, salt, and flour. Mix until just combined.
  5. In a separate bowl, mix 1/3 cup sugar and cinnamon for the swirl.
  6. Pour half the banana batter into the loaf pan. Sprinkle half the cinnamon sugar mix.
  7. Add the remaining batter and top with the rest of the cinnamon sugar.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool before slicing.

Notes

  • Use very ripe bananas for the best flavor.
  • Do not overmix the batter to keep the bread tender.
  • Check the bread at 50 minutes to avoid overbaking.
