Description

  • 6 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 24 oz (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • ½ cup heavy cream
  • 2 teaspoons pure vanilla extract
  • ½ cup light brown sugar
  • 2 tablespoons ground cinnamon
  • ¼ cup unsalted butter, melted
  • 1 ½ cups powdered sugar
  • 23 tablespoons milk (adjust for thickness)
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a bowl, mix crushed cookies, melted butter, granulated sugar, and cinnamon to form the crust.
  3. Press the crust mixture into the bottom of a springform pan and bake for 10 minutes.
  4. In another bowl, beat cream cheese and granulated sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in sour cream, heavy cream, and vanilla extract until combined.
  7. In a separate bowl, combine brown sugar, ground cinnamon, and melted butter for the swirl filling.
  8. Pour half of the cheesecake filling into the crust, then add the cinnamon swirl mixture, and top with the remaining cheesecake filling.
  9. Bake for 50-60 minutes or until the center is set.
  10. Let the cheesecake cool, then refrigerate for at least 4 hours or overnight.
  11. For the glaze, whisk powdered sugar, milk, vanilla extract, and honey until smooth.
  12. Drizzle the glaze over the cheesecake before serving.
