Description

Cinnamon Roll Cookies are soft, chewy, and packed with cinnamon flavor.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the Filling:
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, cinnamon, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar.
  4. Add egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients.
  6. In a small bowl, mix the filling ingredients.
  7. Spread half of the dough on a baking sheet.
  8. Sprinkle the filling over the dough.
  9. Spread the remaining dough over the filling.
  10. Bake for 12-15 minutes.
  11. Let cool before slicing into squares.
