Cinnamon Coffee Crinkles are delicious cookies with a hint of coffee and cinnamon, perfect for any time of the day.
Ingredients

- 1 ½ cups all-purpose flour
- 1 ½ tsp ground cinnamon
- 1 tsp baking powder
- ¼ tsp salt
- 2 tbsp instant coffee granules
- 1 tsp vanilla extract
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 1 large egg
- ¼ cup granulated sugar (for rolling)
- ¼ cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour, cinnamon, baking powder, and salt.
- In another bowl, dissolve coffee granules in vanilla extract. Add melted butter, brown sugar, and egg. Mix well.
- Combine wet and dry ingredients. Stir until a dough forms.
- Shape dough into small balls. Roll each ball first in granulated sugar, then in powdered sugar.
- Place balls on the baking sheet, spaced apart. Bake for 10-12 minutes.
- Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.

- Store cookies in an airtight container for up to 5 days.
- Adjust coffee amount for stronger or milder flavor.
