Ingredients

- 4 sweet potatoes
- 4 tsp vanilla ghee
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 cup chopped walnuts or pecans
- 2 apples, cored & diced
- Coconut milk or almond milk to taste
Instructions
- Preheat oven to 400°F (200°C).
- Wash and poke holes in sweet potatoes, then bake for 45-50 minutes until tender.
- Scoop out sweet potato flesh into a bowl.
- Mix in vanilla ghee, cinnamon, and nutmeg.
- Top with diced apples and chopped nuts.
- Pour coconut or almond milk over the bowl to your liking.
Notes
- For extra sweetness, drizzle with honey or maple syrup.
- Store leftovers in an airtight container for up to 2 days.
