Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream (or Greek yogurt)
  • 1 1/2 cups peeled and diced apples (about 2 medium apples)
  • For the crumble topping:
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, and vanilla extract.
  4. Add sour cream and diced apples to the wet mixture; stir until combined.
  5. Gradually add dry ingredients to the wet mixture; mix until just combined.
  6. In a separate bowl, combine crumble topping ingredients until crumbly.
  7. Fill muffin tins with batter and sprinkle crumble on top.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
