Ingredients

  • 3 cups puffed rice cereal
  • 1 1/2 cups mini marshmallows (or 1 cup mini marshmallows + 1/4 cup marshmallow fluff)
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups white chocolate chips or white chocolate candy melts
  • 1 tablespoon coconut oil (optional, for smoother melting)
  • 1/2 cup red, green, and white nonpareils

Instructions

  1. Melt the butter in a large saucepan over low heat.
  2. Add the marshmallows and vanilla extract. Stir until melted and smooth.
  3. Remove from heat and add the puffed rice cereal. Mix well to coat.
  4. Spread the mixture into a greased pan and press down evenly.
  5. Melt the white chocolate with coconut oil in a microwave-safe bowl.
  6. Pour the melted white chocolate over the rice cereal mixture.
  7. Sprinkle with nonpareils before the chocolate sets.
  8. Let cool completely before cutting into squares.
