Description

Delicious chocolate cupcakes filled with strawberry jam and topped with strawberry buttercream.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 cup vegetable oil or canola oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk, room temperature
  • 1/2 cup hot coffee or hot water
  • 3/4 cup strawberry jam or preserves (seedless preferred)
  • Optional: 1 teaspoon lemon juice
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1/4 cup thick strawberry puree or strawberry jam
  • 1 teaspoon vanilla extract
  • Pinch of fine salt
  • 12 tablespoons heavy cream as needed
  • Fresh whole strawberries, hulled and dried
  • Optional: chocolate drizzle or shaved chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
  2. In a bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. In another bowl, whisk oil, eggs, vanilla, buttermilk, and hot coffee or water.
  4. Combine wet ingredients with dry ingredients. Mix until just combined.
  5. Fill cupcake liners halfway with batter. Bake for 18-20 minutes.
  6. Let cupcakes cool completely.
  7. Using a knife or cupcake corer, remove a small section from the center of each cupcake.
  8. Fill the center with strawberry jam.
  9. For the buttercream, beat softened butter until creamy. Gradually add powdered sugar.
  10. Add strawberry puree, vanilla, and salt. Mix until smooth. Adjust consistency with heavy cream.
  11. Frost the cupcakes with strawberry buttercream.
  12. Garnish with fresh strawberries and optional chocolate drizzle or shaved chocolate.

  • Adjust the amount of jam to your taste preference.
