Ingredients

  • 1 cup (84g) natural unsweetened cocoa powder
  • 1 ½ cup (300g) granulated sugar
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 large eggs
  • 1 ½ cup (360ml) buttermilk
  • ½ cup (118ml) vegetable oil
  • 1 tsp vanilla extract
  • ⅔ cup (167g) creamy peanut butter

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, then mix in buttermilk, oil, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Spoon batter into muffin cups, filling each halfway. Add a spoonful of peanut butter to each, then top with remaining batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool in the pan for 5 minutes, then transfer to a wire rack.

  • Do not overmix the batter to keep muffins light.
