A quick and healthy Chicken Zucchini Stir Fry packed with flavor.


Ingredients

  • 1 lb boneless, skinless chicken breast (or thighs), thinly sliced
  • 2 medium zucchinis, sliced into half-moons
  • 1 red bell pepper (optional), sliced
  • 3 cloves garlic, minced
  • 2 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (optional, for richness)
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoon vegetable oil (for stir-frying)
  • Salt and pepper to taste
  • Sesame seeds and green onions, for garnish

Instructions

  1. Heat vegetable oil in a pan over medium-high heat.
  2. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Remove chicken from the pan and set aside.
  4. In the same pan, add garlic and cook for 30 seconds.
  5. Add zucchini and bell pepper; stir-fry for 3-4 minutes until tender-crisp.
  6. Return chicken to the pan.
  7. Add soy sauce, oyster sauce, honey, sesame oil, salt, and pepper. Stir well.
  8. Cook for another 2 minutes until heated through.
  9. Garnish with sesame seeds and green onions before serving.
