A quick and healthy Chicken Zucchini Stir Fry packed with flavor.
Ingredients

- 1 lb boneless, skinless chicken breast (or thighs), thinly sliced
- 2 medium zucchinis, sliced into half-moons
- 1 red bell pepper (optional), sliced
- 3 cloves garlic, minced
- 2 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon oyster sauce (optional, for richness)
- 1 tablespoon honey or brown sugar
- 1 teaspoon sesame oil
- 2 tablespoon vegetable oil (for stir-frying)
- Salt and pepper to taste
- Sesame seeds and green onions, for garnish
Instructions
- Heat vegetable oil in a pan over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes.
- Remove chicken from the pan and set aside.
- In the same pan, add garlic and cook for 30 seconds.
- Add zucchini and bell pepper; stir-fry for 3-4 minutes until tender-crisp.
- Return chicken to the pan.
- Add soy sauce, oyster sauce, honey, sesame oil, salt, and pepper. Stir well.
- Cook for another 2 minutes until heated through.
- Garnish with sesame seeds and green onions before serving.
Notes
- Serve over rice or noodles for a complete meal.
- Adjust sauces to taste.
- Use low-sodium soy sauce for a healthier option.
