Description

A hearty and flavorful pasta salad with chicken, bacon, and fresh vegetables, perfect for a quick lunch or side dish.


Ingredients

  • 8 ounces corkscrew pasta (rotini or fusilli)
  • 1/2 cup Italian-style dressing
  • 1/2 cup mayonnaise
  • 2 cups cooked chicken, chopped
  • 6 slices cooked bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded Muenster cheese (or Monterey Jack as a substitute)
  • 1/2 cup celery, diced
  • 1/2 cup green bell pepper, chopped
  • 1 ripe avocado, diced
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, mix Italian-style dressing and mayonnaise.
  3. Add cooked pasta, chicken, bacon, cherry tomatoes, cheese, celery, and bell pepper. Toss to coat evenly.
  4. Gently fold in diced avocado.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving.

Notes

  • Use rotisserie chicken for quick preparation.
  • For a spicier version, add a pinch of red pepper flakes.
