- 3 pounds russet potatoes, peeled and cubed
- 1/2 cup unsalted butter
- 1 cup sour cream
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese (or more, to taste)
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon ground black pepper
- Salt, to taste
- 1/2 cup crispy fried onions (optional, for topping)
- 1 tablespoon olive oil or butter (for greasing the baking dish)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a baking dish with olive oil or butter.
- Boil the cubed potatoes in salted water until tender, about 15 minutes.
- Drain the potatoes and return them to the pot.
- Add butter, sour cream, and heavy cream to the potatoes. Mash until smooth.
- Stir in the cheddar cheese, mozzarella cheese, green onions, garlic powder, onion powder, paprika, black pepper, and salt.
- Transfer the mixture to the prepared baking dish. Smooth the top.
- Sprinkle crispy fried onions on top, if using.
- Bake for 25-30 minutes, until bubbly and golden.

- For added flavor, mix in cooked bacon or ham.
